It’s been my pleasure to manage the Delray GreenMarket in the Park for the last seven years. Throughout the seasons, I’ve tasted many wonderful dishes, made by GreenMarket customers and vendors, who have used the tasty ingredients they’ve found at the market to create heirloom recipes. I’ve seen customers and vendors come back and swap their “secret recipes” with each other, and it inspired me to assemble all of these creations into one fabulous collection of GreenMarket recipes.

Inside this cookbook you will find more than 150 recipes for appetizers, soups, salads, vegetables, side dishes, pasta dishes, seafood, entrees, desserts, breads, cocktails, and even condiments. Many of them include ingredients that you can find right at the GreenMarket. I encourage you to get your culinary juices flowing. Try your hand at making as many of these dishes as you can. You may even come up with a new recipe for the next edition of the GreenMarket Cookbook!

I would like to thank everyone who contributed to this cookbook, and the Delray Beach Community Redevelopment Agency—who created the GreenMarket in 1996 and has continued to support this project ever since.
